Today is my one year anniversary of living in New York City.
It has been an incredible year. I’ve been paying my own rent , I’ve been a working actress, I’ve met so many incredible people; and, perhaps most important, I’ve learned a great deal about myself.
I am stronger than I realized, and confident that I’ll achieve all of my goals.
Tonight I plan on toasting to a beautiful first year in NYC, and to many more!
“The Etymology of Bird”, in which I play the Title role (!) opens this Friday in Brooklyn’s Von King Amphitheater. I haven’t been blogging about food, because I’ve been completely absorbed in my work on the play. Discovering the character has been great, and I can feel myself growing as an actress everyday.
To the cast and production team I’m known as Jenné the uber healthy girl who always brings her own lunch and dinner. I do enjoy eating out, but I’m not trying to spend all my money on food every day we have rehearsal. I’ll rush my ass off to throw together something tasty and healthy before heading to rehearsal. I take my eating very serious, as everyone has discovered!
This is one of my tasty meals that I threw together one morning before heading to rehearsal. It’s incredibly quick (once you’ve cleaned the Kale), and even more nutritious. It’s just the type of light meal I need to do my best work on stage ; )
This dish would be even better with a big piece of Corn Bread.
Feel free to substitute any leafy green for the Kale. Bagged spinach would make this meal’s preparation even quicker, you could call it “10 minute Black Eye Pea Salad”!
