Simply simplicity today. Raw spaghetti with marinara. The perfect 5 minute meal to enjoy at the end of a long day. Tasty, tangy, sweet with a little crunch. Dress is up, or further down.
With Mother’s Day less than a week away I’m thinking a lot about my mom. She makes a few of my recipes from this blog; and being that she never really liked to cook when I was growing up, that means a whole lot to me. I think she would enjoy this raw pasta; perhaps served with a big spinach salad and Merlot. Sure, she might get hung up on having to use a fancy looking spiralizer, but she would soon fall in love with having raw pasta in less than a minute.
I made this dish last week for a client, but fancied up with delicious portabella meatballs. Today though, I was craving ease. My mom would do the same.
|me, Mommy and Nana|
If only I could fly home this Mother’s Day to see my mom and Nana. I would cook for them everyday, and we’d talk late into the evening like we always do. Nana would fall asleep in the chair, mid-sentence (like I do late at night). We would joke, laugh, eat and be a big bundle of love palpable to anyone within a mile radius. What a lucky girl I am : )
How do you like to celebrate the mother’s in your life?
