Vegan Spelt Flour Pancakes

Almond flour add a great nutty flavor and extra nutrition to these fluffy spelt flour pancakes. If you do not have it, try using another wholesome flour like teff flour, coconut flour, or buckwheat flour. Or use more spelt flour. If you don't have Sesame Kingdom yet, try topping these pancakes with chocolate tahini sauce.

  • 1 cup whole spelt flour
  • ½ cup almond flour
  • 1 tbsp arrowroot powder or cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • 1 tbsp cane sugar or coconut sugar (optional)
  • 1 cup soy milk or other non-dairy milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • coconut oil for frying
  • 2 tbspStrawberry Sesame Kingdom spread
  • 2 tbsp water
  • 2 sliced bananas for topping
  1. In a mixing bowl combine the spelt flour, almond flour, arrowroot, baking powder, baking soda, salt, and sugar. Whisk to
  2. combine.
  3. In another mixing bowl combine the soy milk, vanilla, and apple cider vinegar. Whisk to combine.
  4. Grease and preheat a skillet on medium-high heat.
  5. Pour the wet ingredients into the dry, and stir until just mixed.
  6. Reduce the heat to medium, and drop about ⅓ cup batter onto the skillet to make pancakes.
  7. Cook on each side for about 2-3 minutes, or until they’re slightly golden brown.
  8. Repeat with the remaining batter. It should make 6-8 pancakes.
  9. To make the sesame seed drizzle: Place the sesame spread in a small mixing bowl, and add the water. Use a fork or a small whisk to blend until creamy.
  10. Top the finished pancakes with sliced banana, maple syrup, strawberry sesame sauce, and cacao nibs.
