Easy Roasted Carrots

Serves: 4
  • 2 bunches of carrots (about 12), scrubbed clean
  • 3 tablespoons Pompeian grapeseed oil
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  1. Preheat oven to 450°, and line a baking sheet with a silicon mat or parchment paper.
  2. Place the whole carrots onto the baking sheet, then drizzle on the oil.
  3. Toss them lightly to coat, then spread evenly onto the baking sheet.
  4. Sprinkle on the salt and pepper, then roast for 30 minutes, or until tender and crispy at the tips.
