This week for my meal prep I’m pulling out a couple of my all time favorite recipes. One, the tempeh tikka masala, has been on constant weekly rotation since I created the recipe a year ago. To me it’s comfort food at it’s finest, and it happens to be totally good for you. That combination of creamy coconut milk and bright acidic tomatoes reminds me of the rich tikka masala I would order at Indian restaurants as a kid. The dish is bursting with flavor, and gets better as it sits, which makes it absolutely ideal for meal prep.

In my experience meal prepping leads to greater overall satisfaction with life. There’s something so delicious about having food ready for you when you’re hungry. As summer comes to an end I like to create new goals and expectations for myself. My goals usually revolve around my career, and they always include continued healthy eating. My favorite tried and true way to maintain healthy eating is to do vegan meal prep at the beginning of every week. Once I’ve prepared my favorite wholesome ingredients, made a few sauces, stocked up on plenty fresh fruit and vegetables, and made a few healthy snacks, I am ready for the week. Doing vegan meal prep allows me to save money (no need to eat out), save time, and feel my very best.
