Sweet Potato & Tofu Curry | Cheap Vegan Meal Plan

Serves: 3-4
  • ½ yellow onion, diced
  • 2 cloves garlic, minced
  • 1½ tablespoons curry powder
  • 1 can full-fat coconut milk + 2 cups water
  • 1 sweet potato, cubed
  • 1 block extra-firm tofu, cubed
  • ½ bunch kale, chopped
  • 2 tablespoons soy sauce
  • 1½ cups cooked brown rice
  • cilantro and lime juice to garnish (optional)
  1. Pour ¼ cup of water into a skillet, and bring it to a simmer on medium heat.
  2. Add the onions and garlic, and sauté them in the water. They will soften and cook just like sautéing in oil.
  3. Once the onions are soft, add the curry powder, and toast for 30 seconds.
  4. Add the coconut milk, water, sweet potato, and tofu. Bring it to a simmer and cook for 20 minutes, or until the sweet potato is tender.
  5. Add the kale and soy sauce, and continue to cook for another 5-10 minutes.
  6. Season to taste with more soy sauce.
  7. Serve over brown rice and garnish with fresh cilantro and lime juice.
