Sweet Potato Oatmeal | Cheap Vegan Meal Plan

Serves: 2
  • 2½ cups water
  • pinch of salt
  • 1½ cups old-fashioned oats
  • ½ cup sweet potato puree
  • ½ - 1 cup non-dairy milk
  • 2-4 tablespoons raisins
  • 3 tablespoons maple syrup or 2 tablespoons brown sugar or coconut sugar
  • 2 teaspoons pumpkin pie spice (or a mix of cinnamon, nutmeg, and cloves)
  • ½ cup chopped pecans or walnuts
  1. Bring the water to a boil with a pinch of salt in a saucepan. Then add the oats. Reduce the heat to low, and simmer until the oats are soft (about 8 minutes).
  2. Stir in the sweet potato puree, non-dairy milk, raisins, maple syrup, and spices. Season to taste with more sweetener or spice.
  3. Serve hot and topped with chopped pecans or walnuts.
