Cauliflower Walnut Taco Meat Burrito Bowl

Combine the cauliflower walnut taco meat with these other ingredients to make a delicious and filling burrito bowl!
Serves: 4
Black Bean Corn Salad
  • 1 can black beans, drained and rinsed
  • 2 cups frozen or fresh corn, thawed or grilled or quick sautéed if fresh
  • 1 ripe tomato, diced
  • ¼ cup red onion, diced (optional)
  • ¼ cup fresh cilantro, chopped
  • ½ teaspoon salt + more to taste
  • juice of 1 lime
Lime Vinaigrette
  • ¼ cup fresh lime juice, from about 2 limes
  • 1 tablespoon dijon mustard
  • 2 teaspoons maple syrup or agave
  • ½ teaspoon black pepper
  • ½ teaspoon cumin powder or cumin seeds
  • ⅓ cup grapeseed oil
Cauliflower Walnut Taco Meat Burrito Bowl
  • 1 cup Cauliflower Walnut Taco Meat
  • 1 cup black bean corn salad
  • ½ cup cooked rice (I cooked rice and quinoa together)
  • 2 cups romaine lettuce tossed with lime vinaigrette
  • ½ avocado
Black Bean Corn Salad
  1. Place the ingredients into a mixing bowl and stir well. Season to taste with more salt if necessary.
Lime Vinaigrette
  1. Place the ingredients into a jar.
  2. Tighten the lid and shake until emulsified.
  3. Toss romaine lettuce or other salad greens with this dressing for your burrito bowl.
Assemble the bowl
  1. Place all of the burrito bowl ingredients into a bowl and serve!
