Serves: 1 cup
  • 1 bunch fresh cilantro, stems and leaves
  • ½ cup toasted coconut shreds
  • 1 clove garlic, chopped
  • 1 lime
  • 1 tsp salt
  • 3 tbsp extra virgin olive oil
  1. Place all ingredients into a food processor and blend until you have a coarse pesto texture.
