Give me a salad everyday and I’m happy. Oh, but not a simple boring salad. I want a hearty and colorful salad, made with a mix of roasted and raw vegetables, tossed in a creamy dressing, and finished with something crunchy. This Winter Kale Salad is a variation of the salad that I eat almost every day, all year round. Depending on the season I’ll use different veggies, and depending on what I’ve got in my kitchen, I’ll use different things to bulk it up. But the formula is the same: tender massaged kale, flavorful creamy dressing, veggies, color, and something crunchy.

Why I love salad
At the base of my personal food pyramid are greens. Fresh, bountiful, nutritious, tender, tough, light green, dark green, cruciferous, chlorophyll-rich greens! While I love them cooked to perfection, I especially love them in the raw, in salads. And just to be clear, I’m not talking about making a simple side salad of romaine lettuce with a light dressing. I’m talking about a big entrée salad that is filling, balanced, and full of texture and color.
There is certainly some skill to making the perfect salad. You’ve got to have the right dressing and the right additions. The perfect entrée salad should have a nice blend of fresh greens, colorful starchy or non-starchy veggies, legumes, a healthy dressing, whole grains, and some nuts or seeds for extra nutrition and crunch. This past summer we relocated from New York City to Los Angeles, so I thought it would be fun to do an updated vegan kitchen tour for you. If you’re new to this lifestyle I hope this video and vegan pantry staples guide helps you to stock your own kitchen. Don’t feel like you have to go out and purchase all of these ingredients today. Over time as you try new recipes you’ll start to build up your spice cabinets, and learn how to use things like tahini or miso in more than one recipe. Take your time and have fun with it!
However, it is important to have some foods in your kitchen at all times. You should always have whole grains, beans, lentils, canned goods, vegetables, and spices on hand so you can easily throw together a delicious and balanced meal. In our house weekly shopping usually consists of us buying more fresh vegetables and fruit, and replenishing low quantities of vegan pantry staples. My partner and I both have a list of kitchen staples on our phone, and when we run out we check that item off our list. That way when we go shopping we can consult that list to see what we need to replenish at home.
