It’s this vegan Instant Pot Mexican Rice for me.
Tender, fluffy, and so tasty. Mexican rice is so wonderful because it’s a simple-to-make dish that can elevate whatever it’s served with. Most often I serve it with simple home-cooked black beans or grilled tofu and vegetables. But sometimes, I just eat it as a snack as is. However you enjoy it, this vegan Instant Pot Mexican rice is the truth.
How to start a vegan diet | Simple tips for beginners
Happy New Year!!! It’s #Veganuary so I’ll be sharing lots of guidance and recipes to help you start or recharge your vegan journey all month long. As I complete my 9th year of being vegan I’m in awe of how much this movement and lifestyle has grown. When I became vegan in 2011 most people had never even heard that word, and those who knew about the lifestyle were often hostile to vegans like me. There weren’t nearly as many vegan blogs, not as many amazing cookbooks, were only a couple dozen restaurants, and certainly weren’t not as many vegan products as there are today. We might be reaching that 10% tipping point where this movement picks up monumental momentum. We need it so badly, especially as we watch our planet literally burn. Billions of animals are born each year just to die for our consumption. These chickens, fish, cows, and pigs live their short lives in hell, and die under the most heinous of circumstances. Even more, animal agriculture is the number one contributor to carbon gas emissions in the world. Climate change is happening, and if we don’t take immediate action the most vulnerable among us will suffer the most.
Reduce Bloating with 6 Simple Tips
Disclaimer: These tips to reduce bloating aren’t meant to stand in for professional medical advice. If you are experiencing chronic bloating, or painful bloating, or have any serious digestive issues, make sure you speak to your doctor. The tips in this post are pillars of an overall healthy lifestyle, so if you have a medical condition causing bloat they should still be very helpful.
I know bloat, better than I’d like to. Since I was a teenager bloating has been a regular part of my life. It’s caused me discomfort, pain, embarrassment, and frustration. I’ve spent money on expensive elixirs, taken laxatives, eaten more than my share of Activia yogurt, and have even done hydrocolonics, all on my quest for a flatter belly and efficient digestive system. But none of those things worked for me because I wasn’t addressing the root of the bloating issue: poor diet and lifestyle, which led to poor digestion and elimination.
Cauliflower Walnut Taco Meat
I’m back!!! I’m now the very proud and very tired mom of a beautiful baby girl. She’s perfect! She’s sitting here with me now babbling away in her Baby Bjorn bouncer 🙂 This week Baby J turns 5 months. This has definitely been the longest yet shortest, most rewarding, most precious, and most difficult 5 months of my life. In a future blog post I’ll go into detail about my 37 hour home birth, and I’ll share a more detailed account of what I’ve been eating as a vegan breastfeeding mom, but today I’m sharing a new discovery: cauliflower walnut taco meat!
