These are so good. Aside from the arm workout you'll get when grating the veggies, they're also easy to make. Honestly, I just use the small grater on my food processor attachment. Makes it even easier. Recipe easily doubled. The veggies should all be about medium sized.

Ingredients
1/2cupfrying oil
2medium russet potatoespeeled
2medium sweet potatoespeeled
2medium beetspeeled
1/2onion
4tsppotato starch egg replacer
1/4cupall purpose flour
2tspsalt
apple sauce
Instructions
Preheat oven to 225°.
Peel and grate the potatoes, beets, and onion into a large mixing bowl lined with paper towel. OR, if using a food processor to grate the veggies: grate them then transfer to a mixing bowl lined with paper towel.
In another large mixing bowl combine the potato starch, flour, and salt.
Carefully use the paper towel to wring out excess liquid in the veggies, then transfer them into the bowl with the flour. Toss the grated veggies with the flour mixture until well combined.
Heat oil in a skillet or large pot to about 350° degrees, and line a large plate with 3 layers of paper towel to catch extra oil. Form the batter into very thin latke patties, and fry on each side for about 2-4 minutes, checking often.
Transfer to the paper towel lined dish, and repeat with the rest of the batter.
Keep the latkes warm in the oven until ready to serve.
Serve with apple sauce, or your favorite toppings.
