Ingredients
4handfuls fresh pre-washed arugula
1/2large cucumberseeded and diced (about 1 cup)
1ripe tomatodiced (about 1 cup)
1cupcooked chickpeas
1/4cuppitted kalamata olives
2-4tablespoonsred wine vinaigrette
1pitacut into triangles
Instructions
Toss the arugula, cucumber, tomato, chickpeas, and olives in a mixing bowl with the vinaigrette.
Place in serving plates and serve with pita wedges.
