Instructions
Place the avocado in a mortar and pestle or large bowl, and mash slightly with a fork.
Add the diced mango, red onion, jalapeño, cilantro, lime juice, and sea salt and mash with the pestle or a fork until the guacamole is the texture you like.
Season to taste with more salt and lime juice before serving.
Notes
Guacamole is so easy to make. Use perfectly ripe avocados for the best taste and texture. Ripe avocados should be about the softness of your thumb pad at their base. Got ripe avocados, but not ready to make guacamole? Store them in the refrigerator for up to 2 weeks (if you're lucky). They will stay perfectly ripe.
