When the summer heat won't quit, this refreshing watermelon smoothie is the easiest way to cool down — and the perfect way to use up that leftover melon sitting in your fridge. For an extra-frosty sipper, use all or partly frozen melon. Add fresh mint for a mojito-like finish, or basil for a sweet, herbal touch.
2cupscubed honeydew melon or cantaloupeor another melon such as Juan canary melon
6large fresh mint and/or basil leavesoptional
Instructions
Add the watermelon, melon, and mint or basil (if using) to the blender.
Cover and blend until smooth, then enjoy immediately!
Notes
Use a high-speed blender for the smoothest consistency. No high-speed blender? Blend in small batches and strain before serving if you'd like it silkier.
Taste and adjust. Melon sweetness varies with ripeness and season. A squeeze of lime brightens things up, and a drizzle of maple or agave sweetens a mild batch.
Freeze your fruit before blending for a frostier, creamier texture — no ice needed, so nothing waters down the flavor.
Garnish each glass with a slice of watermelon, melon, or lime, or float a few small cubes on top.
Serve chilled in a glass straight from the freezer to keep things cold to the last sip.
Storage: Watermelon smoothies are best enjoyed right away, but leftovers keep in an airtight container in the fridge for up to 24 hours — just stir or re-blend before drinking, as it'll separate as it sits.Freezing: Pour extra smoothie into an ice cube tray and freeze, then store the cubes in a freezer-safe container for up to 3 months. Blend with a splash of water for an instant slushie-style smoothie.
