Preparing cauliflower in the air fryer is one of my favorite ways to enjoy this humble veggie. This recipe is an ode to my Southern roots—a bold spice blend and the magic of the air fryer transform simple cauliflower florets into golden, caramelized bites with a soulful twist. The blend of smoky flavor, crispy edges, and tender centers will have you reaching for “just one more piece” every time.

Smoked paprika, garlic powder, toasty cumin seeds, and a touch of cayenne pepper bring warmth and depth, while fresh cauliflower and extra-virgin olive oil keep things wholesome and light. Air frying locks in moisture for a perfectly balanced, crisp yet juicy bite that tastes chef-made. Plus, everything comes together in under 30 minutes!

Cauliflower: Choose a fresh, firm head of cauliflower with tightly packed florets. I usually use white cauliflower, but Romanesco or purple cauliflower are suitable substitutes for a pop of color and delicate flavor. 

Oil: Extra-virgin olive oil adds a slightly rich flavor, or use avocado oil for a more neutral taste. For a hint of sweetness, use coconut oil. 

Spices: Smoked paprika adds rich, smoky depth, garlic powder adds savorniess, and cumin seeds toast up for a nutty crunch. A hint of cayenne pepper adds moderate heat, and salt ties all the flavors together.

How to Make Caramelized Air Fryer Cauliflower

Have a few minutes of prep time, a knife, and pantry staples? You can make this delicious side. Here’s how to do it:

  • Prep the Cauliflower. Cut the cauliflower into medium florets and rinse well. Pat dry thoroughly with a paper towel or clean kitchen towel (this is key to making crispy air fryer cauliflower). Meanwhile, preheat the air fryer to 350ºF.

  • Season. In a large bowl, toss the cauliflower florets with the oil. Then toss with the spices until every piece is evenly coated.
  • Arrange the cauliflower in a single layer in the basket (a little overlap is fine—it will shrink as it cooks). Depending on your air fryer size, you may need to cook in batches. I recommend lining the air fryer basket with parchment paper to keep the spices intact.

  • Cut the cauliflower evenly. Do your best to cut the cauliflower into even-sized pieces so the florets cook uniformly. This ensures extra crispy edges.
  • Don’t skip drying the cauliflower. Moisture is the enemy of crispiness! Pat the florets dry before seasoning to ensure golden, roasted edges. 
  • Toss well. Ensure the spice mixture covers the cauliflower evenly to get the best flavor in every bite. 
  • Flip the cauliflower every 5 minutes. This helps the cauliflower cook evenly and caramelize on all sides. 
  • Cook in batches, if necessary. If your air fryer basket is small or you’re doubling the recipe, air fry in several rounds. Overcrowding the basket prevents the cauliflower from caramelizing. 
  • Softer cauliflower. The air fryer creates cauliflower that has a juicy crunch, but it isn’t soft like oven-roasted veggies may be. For melt-in-your-mouth texture, parboil the cauliflower for one minute before cooking. Allow it to cool until safe to handle before gently patting away excess moisture, and seasoning the cauliflower. Then follow the instructions below. You may find that 10-15 minutes in the air fryer is all it needs.

  • Citrusy: Add a squeeze of lemon juice or a sprinkle of lemon zest before serving for bright, zippy flavor.

    This is excellent! The seasoning and the crispy tender texture is really addictive. I’ve made it twice in 4 days & it’s going in the regular rotation.
