As many of us living the vegan lifestyle — or just trying to add more plant-based meals to our week — have learned, beans are one of the most cost-effective and nutritious ways to get plant protein on the table. From chickpea burgers and black bean pizza crusts to black bean cookies and black-eyed pea curry, they can seemingly do it all! Fifteen years in and I’m still finding new ways to use beans, and this Mediterranean Chickpea Salad has become one of my favorites.
Salads are an obvious vehicle for beans, showcasing their incredible flavor and texture. Today, we’re dressing chickpeas (also known as garbanzo beans) in a tangy-sweet red wine vinaigrette and tossing in handfuls of fresh chopped herbs, halved cherry tomatoes, briny olives and capers, and earthy artichokes. I make a big bowl on Sunday and eat it all week — proof that even in the simplest formats, beans are still stunners!

Key Ingredients

Chickpeas: Also known as garbanzo beans, you’ll need two cans. Rinse and drain them well before adding them, since any excess liquid will water down the vinaigrette. For extra-creamy, perfectly cooked beans, make them homemade with my guide on how to cook beans — you’ll need about 3½ cups.
Cherry Tomatoes: They bring sweetness and juiciness to balance all that brine. Grape tomatoes work just as well, and in the height of summer, any ripe tomato from the farmer’s market will do beautifully.
Artichoke Hearts: Earthy, tender, and a little tangy. Jarred (marinated or brine) or frozen both work — just pluck out the jarred ones well and thaw the frozen ones completely before adding them to the bowl. Marinated artichoke hearts are kept in oil, so do your best to drain off any excess oil before adding to the salad.
Olives: Use Kalamata or Niçoise olives for an authentic Mediterranean experience, although Castelvetrano or Spanish olives also work great.
Capers: These little flower buds pack a briny, lemony punch that wakes up the whole salad. Drain them before adding.
Herbs: For a fresh herbal flavor and sweetness. Essential for flavor and freshness, so don’t skip them! Grab a mix of your favorite fresh herbs, such as dill, parsley, mint, and/or basil.
Red Wine Vinegar: The tangy backbone of the vinaigrette. Its bright, fruity acidity is what makes this dressing sing. This whole salad was actually inspired by my vegan nicoise salad recipe, so the dressing is almost the same.
Extra Virgin Olive Oil: Quintessentially Mediterranean and worth splurging on here. Since it’s not being cooked, its peppery, fruity flavor comes through in every bite, so use a good one for the best results.

Recipe Variations
Swap in any of the following to make this chickpea salad your own:
- Beans: White beans — cannellini, navy, or Corona beans — all make fantastic stand-ins for the chickpeas. They offer slightly different textures and flavors, though all are still delicious.
- Use different vegetables: Don’t have tomatoes? Use chopped peppers and cucumbers, or roasted or Grilled Eggplant and Air Fryer Zucchini instead.
- Switch up the dressing: Swap in classic balsamic for a bolder dressing, or white balsamic for a more delicate touch that’s still Mediterranean in its own right.
- Add lemon: A squeeze of lemon juice or a touch of fresh lemon zest adds extra brightness.
- Add vegan feta: Crumbled vegan feta brings a creamy, salty tang that’s right at home here.
- Add sun-dried tomatoes: Chopped oil-packed sun-dried tomatoes deepen the whole bowl with a concentrated sweetness.
How to Make Chickpea Salad

- Assemble. Combine the chickpeas, tomatoes, artichoke hearts, olives, capers, and herbs in a large mixing bowl.

- Make dressing. In a separate bowl or a lidded jar, combine the dressing ingredients except the olive oil. If using a bowl, whisk while slowly drizzling in the olive oil until the dressing is emulsified. If using a jar, add the olive oil, screw on the lid, and shake until smooth.

- Dress salad. Pour the dressing over the salad and toss well.

- Marinate. Let the salad rest for 15 minutes before serving.
Jenné’s Recipe Tips
- Marinate when possible. Marinating for just 15 minutes before serving lets the dressing soak into the salad and develop all those flavors. Refrigerate overnight for even more.
- Don’t skimp on the herbs. They’re a critical flavor component, so err on the side of more rather than less. Use your favorite combination of parsley, mint, basil, and dill.
- Drain the chickpeas well. Wet chickpeas water down the vinaigrette. Give them a good shake in the colander, then let them sit a minute before adding them to the bowl.
- Pick your vinaigrette emulsion method. Shaking in a lidded jar is quicker and more straightforward, but whisking in a bowl generally creates a better emulsion.
- Season to taste, especially after resting. As the chickpeas absorb the dressing, the flavors settle, so always season after marinating rather than before.
- Add some crunch. Garnish the salad with toasted almonds. Toasted pine nuts, pistachios, sunflower seeds, or sesame seeds all work in place of the almonds. Sunflower and sesame seeds also make it nut-free.

Serving Suggestions
Serve this vegan chickpea salad cold, garnished with toasted almonds, as a light main dish or hearty side. Toss it with cooked orzo, farro, or quinoa for a full meal. Or add cooked pasta to make it a vegan pasta salad. Pile it onto crusty toast, or tuck it into a pita with a handful of arugula. It’s also right at home alongside any of these plant-based mains:

Storage Directions
- Refrigerating: Store leftovers in an airtight container in the fridge for up to 4 days. The flavors keep developing, so day two is often the best day.
- Freezing: Leftovers do not freeze well, as the beans’ texture will suffer.
- Make Ahead: Toss the whole salad together up to a day in advance — that long marinating time only makes it better. Add the toasted almonds right before serving to keep them crunchy.

Nope! Peeling is worth the trouble for silky hummus, but here you want the chickpeas to hold their shape and texture. Leave those skins right where they are.

Ingredients
Chickpea Salad
- 2 14 oz cans chickpeas, drained and rinsed (about 3 1/2 cups)
- 1 cup cherry tomatoes, halved
- 1/2 cup quartered artichoke hearts, jarred (drained) or frozen (thawed)
- 1/4 cup pitted Kalamata or Niçoise olives, halved
- 2 tbsp capers, drained
- 1/2 cup each chopped parsley, mint, basil, and/or dill
- Toasted slivered almonds, for garnish, optional

- 3 tbsp red wine vinegar
- 3 tbsp minced red onion, or minced shallots
- 1 large clove garlic, minced
- 1 tbsp smooth Dijon mustard
- 1 tbsp pure maple syrup
- 1 tsp dried thyme
- 1/2 tsp salt, plus more to taste
- 1/4 cup extra virgin olive oil
Instructions
- Combine the chickpeas, tomatoes, artichoke hearts, olives, capers, and herbs in a large mixing bowl. Gently toss until combined.
- In a separate bowl or a jar with a lid, combine the dressing ingredients except the olive oil. If using a bowl, whisk while slowly drizzling in the olive oil until the dressing is emulsified. If using a jar, add the olive oil, screw on the lid, and shake until smooth.
